- 2 ½ cups (315g) all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup (230g) unsalted butter, cold and cubed
- 6-8 tablespoons ice water
Apple Filling:
- 6-7 medium apples (a mix of Granny Smith and Honeycrisp works well)
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon ground allspice
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon butter (for dotting on top)
Egg Wash:
- 1 egg
- 1 tablespoon milk or water
Instructions:
1. Make the Pie Crust:
- In a large bowl, mix the flour, salt, and sugar.
- Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together.
- Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Apple Filling:
- Peel, core, and slice the apples into thin slices (about ¼-inch thick).
- In a large bowl, toss the apple slices with granulated sugar, brown sugar, flour, cinnamon, allspice, nutmeg, lemon juice, and vanilla extract. Set aside.
3. Assemble the Pie:
- Preheat your oven to 375°F (190°C).
- Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim the edges.
- Fill the crust with the prepared apple mixture, spreading it evenly.
- Dot the filling with small pieces of butter.
- Roll out the second disc of dough and place it over the apples. You can create a lattice design or simply cover the pie and cut slits in the top to allow steam to escape.
- Trim and crimp the edges to seal the pie.
4. Bake the Pie:
- In a small bowl, whisk the egg and milk (or water) to make the egg wash. Brush this mixture over the top crust.
- Place the pie on a baking sheet (to catch any drips) and bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust brown too quickly, cover them with aluminum foil.
5. Cool and Serve:
- Let the pie cool for at least 2 hours before slicing. This allows the filling to set.
