Ingredients:
- 2 oranges, peeled and sliced
- 1 grapefruit, peeled and sliced, seeds removed
- 1 avocado, halved, pitted, and sliced
- 1 small red onion, thinly sliced
- ½ cup olive oil
- ¼ cup lemon juice
- 1 tablespoon honey
- Endive and/or small romaine lettuce spears
- Salt and black pepper to taste
Instructions:
- Marinate the Onion: In a small bowl, mix the sliced onion with lemon juice. Let it sit for 10 minutes to mellow the sharpness.
- Prepare the Dressing: In a jar, whisk together olive oil, honey, salt, and black pepper.
- Assemble the Salad: Arrange endive and romaine spears on a plate. Layer with orange slices, grapefruit slices, and avocado.
- Add the Onion: Drain the marinated onion and scatter it over the salad.
- Drizzle & Serve: Pour the dressing over the salad and enjoy!
