Cinnamon-Spiced Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Toppings: avocado, cilantro, lime wedges

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, cinnamon, chili powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Warm the tortillas. Fill with sweet potatoes and black beans, and top with avocado, cilantro, and a squeeze of lime.
