Cardamom Chicken Salad

Ingredients:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon cumin (optional)
  • 1/2 cup celery, diced
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • Fresh greens (spinach, arugula, or mixed salad greens) for serving

Instructions:

  1. In a large bowl, combine the shredded chicken, yogurt or mayonnaise, lemon juice, ground cardamom, and cumin (if using).
  2. Add the diced celery and green onions. Mix until well combined.
  3. Season with salt and pepper to taste.
  4. Serve the chicken salad on a bed of fresh greens or in a sandwich.
