Tamarind Shrimp Curry (Prawns in Tamarind Sauce)

Ingredients:

  • 500g shrimp/prawns (peeled & deveined)
  • 3 tbsp tamarind pulp (soaked in warm water & strained)
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 4 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 1 green chili (slit)
  • 1 cup coconut milk
  • 2 tbsp oil
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a pan, sauté onions, garlic, ginger, and green chili until golden.
  2. Add tomato puree and spices (turmeric, cumin, coriander, chili powder). Cook until oil separates.
  3. Add tamarind pulp and coconut milk. Simmer for 5 mins.
  4. Add shrimp and cook for 3-4 mins until pink and tender.
  5. Garnish with cilantro. Serve with steamed rice!
