
Ingredients:
- 500g shrimp/prawns (peeled & deveined)
- 3 tbsp tamarind pulp (soaked in warm water & strained)
- 1 onion (finely chopped)
- 2 tomatoes (pureed)
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 4 garlic cloves (minced)
- 1-inch ginger (grated)
- 1 green chili (slit)
- 1 cup coconut milk
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions:
- Heat oil in a pan, sauté onions, garlic, ginger, and green chili until golden.
- Add tomato puree and spices (turmeric, cumin, coriander, chili powder). Cook until oil separates.
- Add tamarind pulp and coconut milk. Simmer for 5 mins.
- Add shrimp and cook for 3-4 mins until pink and tender.
- Garnish with cilantro. Serve with steamed rice!
