- 2 sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed

- 1 teaspoon chili powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- Corn or flour tortillas
- Toppings: avocado, cilantro, lime wedges
Instructions:
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, cinnamon, chili powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Warm the tortillas. Fill with sweet potatoes and black beans, and top with avocado, cilantro, and a squeeze of lime.
